Quick Breakfasts in a Microwave

Scrambled Eggs in a Mug

Grease a mug with olive oil, break 2 eggs into it, add 2 tablespoons of milk, a pinch of salt and pepper. Beat with a fork. Put the mug in a microwave for 45 seconds, remove, mix, return the mug to the microwave for 30 seconds. Sprinkle grated cheese over the hot dish.

Quiche With Vegetables in a Mug

Grease a mug with olive oil. Break 1 egg into it, add 2 tablespoons of milk, add a pinch of salt and pepper. Whisk. Add a diced slice of whole grain bread, 2 cherry tomatoes sliced in quarters and 2 tablespoons of frozen spinach. Do not mix. Place the mug in a microwave for 1 minute at full power.

French Toast in a Mug

Melt in a mug 1 ½ tablespoon of butter, dice 2 slices of bread, place in the mug. Break 1 egg into it, pour 3 tablespoons of milk, add a pinch of cinnamon, a pinch of vanilla sugar and regular sugar to taste. Stir and microwave for 1–1 ½ minutes.

Chocolate Muffin in a Mug

Grease a mug with butter, add 4 tablespoons of flour, a pinch of baking soda, 4 tablespoons of sugar, 1 ½ tablespoons of cocoa powder. Add 1 egg, 3 tablespoons of milk and 2 tablespoons of butter. Mix thoroughly and microwave for 2 ½–3 minutes.

Banana Muffin in a Mug

Melt in a mug 1 tablespoon of butter. Cut a banana into slices, place in the mug and mash with a fork. Add 1 egg and 1 tablespoon of milk, mix. Add 3 tablespoons of flour, a pinch of baking soda and 3 tablespoons of sugar, mix again. Place in a microwave for a minute at medium power. Then set high power and cook for another 10 seconds.

Lemon and Coconut Muffin in a Mug

Grease a mug with butter. Add in 4 tablespoons of flour, a pinch of baking soda, 2 tablespoons of sugar, 4 tablespoons of milk or low-fat cream, 1 tablespoon of coconut flakes and 1 tablespoon of lemon zest. Cook for 1 ½–2 ½ minutes at high power.

Baked Oatmeal With Apples in a Mug

Add 3 tablespoons of oats, 1 egg, 1 tablespoon of milk, 1 teaspoon of flaxseed, a pinch of cinnamon and salt in a mug. Add diced apple and honey to taste. Cook in the microwave at full power for 2–3 minutes.

Muffin With Berries in a Mug

Grease a mug with butter. Add in 3 tablespoons of flour, a pinch of baking soda, 1 egg, 3 tablespoons of milk, 3 tablespoons of regular and 1 teaspoon of vanilla sugar. Add a handful of frozen or fresh berries. Cook for 2 ½–3 minutes.

Peanut Butter Oatmeal in a Mug

Mix in a mug 3 tablespoons of oats with 5 tablespoons of water or milk and 2 tablespoons of peanut butter. Cook in three steps (one minute each) at medium power. Serve with your favorite jam.

Omelet With Herbs in a Mug

Beat in a cup 2 eggs with 2 tablespoons of milk. Add a handful of chopped green onions and parsley, season with salt and black pepper and mix thoroughly. Cook at full power for a minute, then for another minute at medium power.

Note that not all dishes are microwave safe. Iron mugs and the gold rimmed ones are not suitable. On the other hand if you’ve got a glass mug, you can even watch the cooking process through it!
