Boiled Potatoes With Dill

Ingredients:

  • 2 ½ lbs (1 kg) new potatoes;
  • 3 ½ oz (100 g) butter;
  • 1 bunch dill;
  • 3 cloves garlic;
  • salt to taste.

Instructions:

  1. Scrub potatoes using a metal sponge, wash thoroughly, and boil in salted water.
  2. While potatoes are cooking, wash and chop the dill, peel the garlic cloves and chop them finely.
  3. When potatoes are ready, drain the water from the pot, add oil, chopped garlic, and dill. Cover the pan and shake its contents well.
  4. Let the potatoes sit under the lid for 5 minutes to allow them to soak in the aroma. Before serving, transfer the potatoes into a deep bowl and top them off with the oil that remained in the pan.

Baked New Potatoes

Ingredients:

  • 2 ½ lbs (1 kg) new potatoes;
  • 5 cloves garlic;
  • 1 sprig rosemary;
  • 1 bunch dill;
  • 3 ½ (100 g) butter;
  • salt to taste, ground black pepper to taste.

Instructions:

  1. Scrub the potatoes with a metal sponge. Cut them in half and boil in salted water until half-cooked (within 10 minutes).
  2. Drain the water from the pot and dry the potato halves. Place them on a casserole dish, add the peeled, crushed garlic cloves, salt, and pepper. Cut the butter into small cubes and arrange them on top of the potatoes, add chopped rosemary.
  3. Bake in an oven preheated to 360°F for 40 minutes. We recommend stirring the potatoes while they are cooking. Sprinkle with chopped dill before serving.

New Potatoes With Suluguni

Ingredients:

  • 2 ½ lbs (1 kg) medium-sized new potatoes;
  • 4 cloves garlic;
  • 2 tbsp butter;
  • 7 oz (200 g) suluguni cheese;
  • greens to taste;
  • salt to taste.

Instructions:

  1. Scrub the potatoes with a metal sponge. Cook them in salted boiling water for 15 minutes. Drain the water from the pot and dry the potatoes.
  2. Peel and chop the garlic. Put butter on a preheated pan and melt it, add garlic, let the oil soak the aroma for about 20 seconds and remove the pan from the heat.
  3. Place the boiled potatoes on a casserole dish and top them off with the melted butter. Cut the suluguni into half-inch slices and put them on top of the potatoes. Transfer the form to an oven preheated to 400°F and cook until the cheese is melted and browned.

Fried New Potatoes

Ingredients:

  • 2 ½ lbs (1 kg) small new potatoes;
  • 3 tbsp sunflower oil;
  • 1 beam of dill;
  • 1 tsp butter;
  • salt to taste.

Instructions:

  1. Wash and dry the potatoes thoroughly. Fill a roasting pan or deep pan with sunflower oil.
  2. Place the potatoes in a container with oil and cook it, periodically stirring, for 15–20 minutes under the lid.
  3. Wash and chop the dill, peel and finely chop the garlic. Sprinkle potatoes with dill and garlic, mix everything thoroughly and fry under the lid for another couple of minutes. At the end of the cooking process, add butter, mix, and remove the potatoes from the heat.

New Potato Salad

Ingredients:

  • 1 lb (500 g) new potatoes;
  • 7 oz (200 g) green beans;
  • 4 ¼ oz (120 g) tinned sardines;
  • a handful of pitted olives;
  • juice of half a lemon;
  • 1 tbsp olive oil;
  • salt to taste, ground black pepper to taste.

Instructions:

  1. Wash the potatoes, cut them in thirds, and boil them until tender. Cut the beans into small pieces and place them in a pan 3 minutes before the potatoes are done. Drain the water and let the vegetables cool.
  2. Put sardines in a salad bowl, add salt, pepper, lemon juice, and mash the sardines with a fork. Put finely chopped olives, boiled potatoes, and beans into the bowl, add olive oil, mix everything well, leave to sit for 15 minutes, and serve the salad.
