How to Cook With Spinach: 8 Fun and Flavorful Dishes

Spinach is a healthy, plant-based protein product, a storehouse of vitamins and minerals. It is the most delicious of leafy greens, whether fresh or cooked. Spinach can get boring, though, so we set out to search for new ideas on how to cook with spinach.

Today, we would like to share with you eight recipes with a creative twist that will enhance the taste of spinach, making this superfood even more pleasant.

Spinach and Ricotta Strudel

The combination of thin dough and flavorful filling will appeal to even a fastidious gourmet.

Ingredients:

  • Filo dough;
  • 10 ½ oz (300 g) spinach;
  • 1 oz (30 g) leeks;
  • 2 cloves garlic;
  • 1 fl oz (30 ml) olive oil;
  • ½ oz (15 g) butter;
  • 1 egg;
  • salt, pepper to taste;
  • 10 ½ oz (300 g) ricotta.

Instructions:

  1. Peel and finely chop garlic and leeks. Heat a pan with vegetable oil and fry until cooked.
  2. Add spinach, season with salt and pepper, toss to coat.
  3. Combine ricotta and spinach, add salt and pepper and stir.
  4. Coat filo dough with water and spread the filling on the edge of the dough.
  5. Enclose the filling in the dough. Coat the strudel with butter and egg.
  6. Lay the strudel out on a baking sheet lined with parchment.
  7. Preheat the oven to 375 °F and bake for 30 minutes.

Chicken Breasts Stuffed With Spinach and Ricotta

Ricotta goes incredibly well with spinach and chicken baked in the oven, resulting in juicy, tender meat with an exquisite filling and a delicious crust.

Ingredients:

  • 2 chicken fillets
  • 3 ½ oz (100 g) spinach
  • 5 ¼ oz (150 g) ricotta
  • 1 tsp paprika
  • 2 tbsp olive oil
  • salt, pepper to taste.

Instructions:

  1. Put spinach in a warm pan with olive oil and stew until it slightly withers.
  2. Add ricotta, mix and remove from heat.
  3. Rub chicken fillet with salt and pepper.
  4. Make an incision on the side of each fillet and fill it with the mixture of spinach and ricotta.
  5. Put the fillets on a baking sheet greased with olive oil, sprinkle with paprika, and pop in the oven preheated to 390 °F for 20–25 minutes.

Salad With Spinach, Avocado, Eggs, and Cucumbers

An excellent idea for a nutritious dinner that contains a large amount of fiber, protein, potassium, and iron.

Ingredients:

For the Salad:

  • 5 ¼ oz (150 g) spinach;
  • 2 avocados;
  • 1 tsp lemon juice;
  • 2 cucumbers;
  • 2 eggs.

For the Seasoning:

  • 4 tbsp natural yogurt;
  • 1 tbsp lemon juice;
  • 1 sprig dill;
  • salt to taste;
  • sesame for topping.

Instructions:

  1. Hard-boil eggs and let them cool. Shell them and chop them coarsely.
  2. Rinse spinach thoroughly, remove the stems, and dry.
  3. Peel avocados, cut them in half, and remove pits. Cut them into slices and sprinkle with lemon juice so that they do not darken.
  4. Finely chop the dill.
  5. Cut cucumbers in halves, then into slices.
  6. In a bowl, combine natural yogurt, dill, and lemon juice. Season with salt and toss to coat.
  7. Combine all ingredients in a salad bowl, season with dressing and sprinkle with sesame seeds. Serve immediately.

Omelet With Spinach and Feta

A magnificent, flavorsome French omelet with a rich taste and a juicy filling.

Ingredients:

  • 3 eggs;
  • 1 ¾ oz (50 g) feta cheese;
  • 1 ¾ oz (50 g) spinach;
  • butter for frying;
  • salt, pepper to taste.

Instructions:

  1. Thoroughly wash and finely chop spinach.
  2. Finely chop or grate feta cheese.
  3. Break eggs into a bowl, add salt, pepper, and beat with a fork.
  4. Heat a pan with butter and distribute the egg mixture evenly on its surface.
  5. Fry the omelet on both sides.
  6. Spread cheese and spinach on one side of the omelet.
  7. Fold it in half, turn off the heat and let the omelet sit in the pan for 30 seconds, then serve.

Chicken Roll in Dough With Cheese and Spinach

A delicious, flavorful, tender chicken dish — perfect for the festive table.

Ingredients:

  • 8 ¾ oz (250 g) puff yeast dough;
  • 2 chicken fillets;
  • 4 ¼ oz (120 g) hard cheese;
  • 1 egg;
  • 1 ⅓ oz (40 g) spinach;
  • ½ tsp chicken seasoning;
  • 2 tbsp sunflower oil;
  • salt, pepper to taste.

Instructions:

  1. Rinse chicken fillet, cover with cling film, and hit.
  2. Add salt, pepper, and seasoning to each fillet.
  3. Sprinkle each fillet with grated cheese and finely chopped spinach.
  4. Roll out the dough and cut into two rectangles.
  5. Form the chicken fillet into a roll and wrap it in the dough, fixing the edges.
  6. Lay the rolls out on a baking sheet greased with vegetable oil.
  7. Beat egg and brush the top of each roll.
  8. Preheat the oven to 390 °F and bake for 35–40 minutes.

Spanakopita

A recipe for a delicious traditional Greek pie — an incredible combination of cheese and herbs, a rich taste and juicy filling.

Ingredients:

  • 14 oz (400 g) feta cheese;
  • 2 tbsp olive oil;
  • 1 bunch scallions, parsley, dill;
  • 1 ¾ oz (50 g) butter;
  • 14 oz (400 g) puff pastry;
  • salt to taste;
  • ¼ tsp nutmeg;
  • 8 ¾ oz (250 g) spinach;
  • 1 onion.

Instructions:

  1. Peel the onion and cut into small cubes.
  2. Rinse and dry greens, chop.
  3. Put spinach in boiling water for 2 minutes. Place in a colander and let the water drain.
  4. Put the onion cubes in a deep frying pan with oil and fry for 5 minutes.
  5. Add spinach, herbs, cheese, and nutmeg. Season with salt and pepper to taste and mix.
  6. Grease a baking mold with butter and melt the remaining butter.
  7. Roll out the dough on a surface sprinkled with flour. Cut out a circle larger than the mold, then cut another circle the size of the mold.
  8. Place the large circle in the mold, making sure to cover the sides. Put the filling inside and cover it with the second circle. Pinch together the edges. Cut away the excess dough and grease with butter.
  9. Preheat the oven to 360 °F and bake for 35–40 minutes.

Baked Spinach With Cheese

Quick and easy recipe for an aromatic, flavorful, and very tasty dish. We recommend serving it with baked chicken.

Ingredients:

  • 2 lb (900 g) fresh spinach;
  • 3 cloves garlic;
  • 5 ¼ oz (150 g) hard cheese;
  • 13 ½ fl oz (400 ml) milk;
  • 3 tbsp flour;
  • 5 tbsp butter;
  • 2 tbsp olive oil;
  • salt, pepper to taste;
  • nutmeg to taste.

Instructions:

  1. Rinse spinach and cut off the stems. Place the spinach in salted boiling water for 5 minutes. Transfer to a colander and let the water drain.
  2. Finely chop the spinach.
  3. Grate cheese on a coarse grater.
  4. Heat a frying pan with olive oil and a couple of tablespoons of butter.
  5. Put a saucepan on the heat with the remaining oil. Add flour and mix.
  6. Add milk and cook until thickened.
  7. Then add pepper and nutmeg to the sauce.
  8. Peel and chop garlic.
  9. Put the spinach and garlic in a preheated pan and fry for 3–4 minutes.
  10. Combine spinach with sauce and put on a baking dish. Sprinkle with grated cheese.
  11. Preheat the oven to 375 °C and bake for 8–10 minutes. Serve hot.

Emerald Cake With Spinach

Cottage cheese cake with raspberries — perfect on the outside and inside.

Ingredients:

  • 7 oz (200 g) spinach;
  • 5 ½ fl oz (160 ml) sunflower oil;
  • 2 eggs;
  • 5 ⅔ oz (160 g) sugar;
  • 1 tbsp vanilla extract;
  • 2 tbsp lemon juice;
  • zest from 1 lemon;
  • ⅓ oz (11 g) baking powder;
  • 7 oz (200 g) wheat flour;
  • 10 ½ oz (300 g) cottage cheese;
  • 3 ½ oz (100 g) cream;
  • 5 ¼ oz (150 g) powdered sugar;
  • 3 ½ oz (100 g) raspberries.

Instructions:

  1. Combine spinach, lemon zest, sunflower oil, and lemon juice in a blender until smooth.
  2. Beat eggs with sugar, add flour mixed with baking powder. Add the spinach blend and vanilla essence to the resulting dough. Mix the ingredients well with a mixer or a spoon.
  3. Line a baking dish with parchment paper and one by one bake three sponge cakes at a temperature of 360 °F for 20 minutes each.
  4. Whip cottage cheese with powdered sugar and whip cream, then combine everything and whip again.
  5. Assemble the cake: cover each cake with the cottage cheese cream and distribute raspberries on top. Spread the finished cake with cream on the sides, decorate with berries, and pop in the refrigerator for 4–6 hours. Done!
