Making children eat vegetables is not an easy task. No matter how you place food on a plate, whatever stories about spinach you make up, little fussy eaters will still find a million reasons to discard vegetables in favor of unhealthy sweets and snacks. Luckily, I came across a spinach pancakes recipe that offers a compromise between healthy and desirable food.

These pancakes are not only quick and easy to make, but also include no sugar whatsoever. You should definitely try them!

Sift oat and wheat flour, baking powder and salt into a deep bowl and mix.

Rinse spinach under running water and remove leaf branches. Use a blender to beat it with milk, an egg and a sliced banana. Add the liquid mixture to the dry one and mix until the batter is even and smooth.

Fry the pancakes until golden brown in a dry non-stick pan. Pour the batter with a ladle or tablespoon.

Serve these spinach pancakes slightly cooled and sprinkled with fresh berries. Any berry jam, condensed milk or whipped cream also goes well. Cook with pleasure!
