Ideas for Breakfast With Eggs

Cuban Style Eggs


  • 8 eggs
  • 18 oz (500 g) canned tomatoes
  • 3 tbsp cream 10% fat
  • 1 onion
  • 1 bell pepper
  • 5 ⅓ oz (150 g) hard cheese
  • 1 tbsp butter
  • salt to taste
  • ground black pepper to taste
  • herbs to taste


  1. Hard boil the eggs, cool, and peel them. Cut them in half lengthwise, take out the yolks and mash them with a fork in a bowl. Grate the cheese on a coarse grater, mix most of it with the yolks.
  2. Add in the cream, salt, and pepper to taste. Stir. Peel the onion and pepper, chop and fry over medium heat for 3 minutes. Add in the tomatoes with juice.
  3. Bring the mixture to a boil and let the liquid evaporate, leaving only a third of it. Stuff the egg whites with this mixture, put them on a baking sheet.
  4. Drizzle with the rest of the liquid from the pan.
  5. Sprinkle the eggs with grated cheese, place in the oven preheated to 350 °F (180 °C) for 15 minutes. Sprinkle the cooked eggs with chopped parsley and serve with a side dish.

Eggs Baked in Avocado


  • 2 avocados
  • 4 eggs
  • scallions to taste
  • salt to taste
  • ground black pepper to taste
  • spices to taste


  1. Wash and divide the avocados in half and remove the seeds. Use a spoon to scoop out some extra pulp in the center of each half.
  2. Wrap the avocado halves in foil and place in a baking dish so that they won’t move during cooking. Break an egg into each half. Season with salt and spices to taste. Bake in an oven preheated to 410 °F (210 °C) for 15 minutes.

Frittata With Mushrooms


  • 4 eggs
  • 10 ½ oz (300 g) button mushrooms
  • 1 onion
  • 2 tbsp Parmesan
  • salt to taste
  • ground black pepper to taste
  • herbs to taste


  1. Chop mushrooms and onions, fry them in hot olive oil until golden brown, season with salt and pepper to taste.
  2. Grate the Parmesan on a coarse grater, add in the eggs and beat until smooth. Pour the mixture over the mushrooms.
  3. Bake the frittata in an oven preheated to 350 °F (180 °C) for 10 minutes.

Egg Bread Bowl


  • 2 eggs
  • 2 buns
  • 1 onion
  • 10 ½ oz (300 g) button mushrooms
  • 6 tbsp sour cream
  • ground black pepper to taste
  • herbs to taste
  • salt to taste


  1. Chop the onion and mushrooms into cubes. Fry the onion in hot oil until golden brown. Next, add in the mushrooms, fry until the liquid evaporates.
  2. Then pour in sour cream, cook for a couple of minutes, season with salt and pepper.
  3. Meanwhile, cut off the top of the buns and scoop out the insides. Put the mushrooms and chopped herbs in there. Break the eggs in the buns. Place the dish on a baking sheet lined with parchment paper. Cook in an oven preheated to 350 °F (180 °C) until eggs are tender.

Egg Crepes


  • 4 eggs
  • ¾ cup (160 g) cottage cheese
  • 2 tbsp sour cream
  • 3 cloves of garlic
  • ¼ bell pepper
  • salt to taste
  • ground black pepper to taste


  1. Beat the eggs until smooth, adding salt and pepper to taste. Grease a small skillet with oil and heat it up. Pour the eggs mixture, frying the crepes for a minute on each side.
  2. We got 4 crepes of medium thickness. They shouldn’t be too thin. Mix chopped garlic, sour cream, and cottage cheese. Salt and pepper to taste.
  3. Then deseed the bell pepper, cut into cubes and add to the cottage cheese. Roll up the crepes with filling, cut them, and secure with toothpicks.
