Traditionally, cream soup is a soup prepared using cream as a key ingredient; however, it is not always the case. This time, we will show you how to make healthy broccoli and cheese soup. Not only this vegetarian treat offers a perfect flavor combination, but it also satisfies hunger as well as meat.

For this recipe, you can use any hard cheese or replace it with spreadable cheese wedges. The most important thing is to make sure that the product fully melts and gives the dish a delicate creamy consistency.

Peel potatoes, carrots, and onions. Coarsely chop them. Place the chopped vegetables on a baking sheet lined with parchment. Sprinkle with olive oil, season with salt and pepper. Toss and bake for 25 minutes at 390 °F.

Boil broccoli cut into florets in salted water.

In a separate pot, combine the baked vegetables with vegetable broth. Cook over low heat, processing it with a blender.

Grate cheese on the coarse side of a grater and add it to the soup. Continually stir the dish until cheese completely melts.

Add broccoli to the soup, reserving some florets for garnishing. Like before, process the vegetable with a blender until smooth. Stir the soup again and remove it from the heat.

Garnish the dish with broccoli florets and slices of baked carrots. It is best to serve the vegetable cream soup with homemade croutons. Garlic, for example.
