If you love shortcrust pastry, we suggest you try this amazing Italian Easter dessert. Soffioni Abruzzesi recipe traditionally uses ricotta cheese, but if you can’t buy it nearby, try making this pastry with regular cottage cheese.

In a large bowl combine the sugar, lemon zest and eggs. Stir thoroughly to completely dissolve the sugar. Add melted and cooled butter to the bowl.

Pour the sifted flour into the mixture and knead a soft dough. Cover the finished dough with plastic wrap and place in the refrigerator for 20 minutes. After the time has passed, remove the dough from the refrigerator and divide it into 6 parts. Shape each into a ball and roll it into a small flat square. Then carefully place the squares into a cupcake pan.

You can make the filling while the dough is in the fridge or after that. Mix the cottage cheese with sugar, egg yolks and vanilla extract until smooth. Beat the egg whites separately with a mixer to a thick foam. Gently mix them into the filling.

Fill the cupcakes with the filling. Fold the edges of the dough over the filling. To prevent it from burning, be sure to cover the treats with aluminum foil before placing them in the oven.

Bake the pastries in an oven preheated to 350 °F (180 °C) for 30 minutes.

If desired, you can top off the pastry with powdered sugar or chocolate glaze. Such a great dessert will not leave anyone indifferent. Cheese lovers and the ones with a sweet tooth will especially appreciate it.
