Today, Cook It would like to invite you on a journey of broadening your culinary horizons. Have you ever tried a mayonnaise chocolate cake? If not, you’re in for a treat.

To point out, mayonnaise chocolate cake is actually a blast from the past. The recipe dates back to the Great Depression when people had little to no access to eggs and cooking oil and had to be very resourceful. If you think about it, it makes perfect sense. After all, mayonnaise is basically oil and eggs, so you can’t taste any mayo-ness when you’re enjoying the cake. The staple ingredient merely helps to give the treat a perfect velvety texture and ultra-moist crumb, simultaneously keeping the sugar from overwhelming your taste buds. Prepare the Cake

Preheat the oven to 350 °F. Grease a 13- x 9-inch pan with shortening and sprinkle with flour.

Separately, cream together eggs, sugar, and vanilla with a mixer until very light brown, about 3 minutes. Add mayonnaise, and beat until incorporated. Add the flour mixture alternately with hot water, starting and finishing with the flour mixture. Beat at low speed until just blended after each addition.

Transfer the batter into the pan. Bake at 350° until a toothpick inserted in the center comes out clean, about 30 minutes. Let cool. Meanwhile, prepare the frosting.

Combine cream cheese, butter, and vanilla extract and beat until creamy.

In a separate bowl, whisk together powdered sugar and cocoa. Gradually add to the butter mixture alternately with heavy cream. Beat at low speed until combined after each addition. Increase the speed to medium and beat until light and fluffy, about 1 minute.
