This swiss roll with halva is incredibly tender, moderately sweet, and quite festive. Every member of the family is going to like it. And the pistachios on top are just a win-win choice.

The main secret of making a sponge cake roll with halva is to give the treat enough time to soak. And the rest of the recipe is very simple and does not require much time.

Steps

1
Done

Beat 4 egg yolks with sugar until smooth. Add water while continuing beating.

2
Done

In a separate bowl beat egg whites and salt until white foam appears. Gradually add sugar.

3
Done

Mix the egg white and egg yolk mixtures. Sift flour with baking powder in and mix thoroughly.

4
Done

Line a baking sheet with parchment paper and spread the batter evenly over it. Preheat an oven to 350 °F (180 °C) and bake the roll for 12 minutes.

5
Done

Flip the cooked layer over on the fabric and remove the parchment paper. Roll up the layer and set it aside for 15 minutes.

6
Done

In the meantime, beat softened butter, add dulce de leche and beat again. Mash halva and add it to the butter mixture, beat until the consistency of a smooth cream.

7
Done

Roll out the cake and grease its inside with the cream, roll up again. Leave in the refrigerator for 2 hours and 30 minutes.

8
Done

Melt the chocolate and pour on top of the roll, sprinkle with pistachios and let the chocolate harden.

Swiss roll with halva can be decorated with other foods. Different varieties of nuts, pieces of white chocolate, berries or slices of fruit go well too.

Like many people nowadays, I love to explore new places. My favorite type is slow travelling, when you can really blend in with locals and learn about new cultures and languages. But I think there are also perfect times for enjoying freshly baked pastry, a cup of fragrant coffee, and a good movie in the comfort of your own home. I guess I'm kind of a cultural omnivore, and I watch different types of movies, but the ones about art and food inspire me the most!
