Fasting, dieting, and healthier eating often force us to give up our favorite baked goods. If it feels as stressful for you as it is for me, then you’re in for a treat. Literally. Today’s recipe for jam-filled crescent rolls does not feature any eggs or dairy. Nonetheless, the dough turns out tender and crumbly.

It is enough to mix seltzer with vegetable oil and flour. In addition to jam, nuts, fruit, and dried fruit, ground poppy seeds and chocolate make an excellent filling. If you’re feeling adventurous, make an assortment of crescent rolls with different filling, and let everyone in the family choose the ones they like most.

Whisk together flour, salt, and shortening.

Add seltzer, stir lightly, then add sunflower oil and knead the dough. If it gets too firm, add some more water; if it sticks to your hands, add flour. Cover the dough and let sit for 10-15 minutes.

Divide the dough in half. Roll each piece into a thin circle and cut it into 16 triangles.

Spoon ½ teaspoon of jam on the wider edge of each triangle and form crescent rolls.

Transfer the crescent rolls to a baking sheet lined with parchment paper. Bake in the oven preheated to 355 °F for 10-15 minutes.

When the jam-filled crescent rolls have cooled, you can sprinkle them with powdered sugar. These treats are delicious and relatively low in calories. Moreover, they are universally liked — the plate will be empty before you know it!
