Powdered Sugar – 3 cups (360 g)
Egg Whites – 3 oz (85 g)
Lemon Juice – ¾ oz (20 g)
Ground Almonds – 3 cups (300 g)
Mixed Peel – 4 oz (115 g)
Lemon – ½ Zested
Cinnamon – 1 ½ tbsp
Cloves – ¼ tsp Ground

Can’t afford spending Christmas at a palace? Luckily, you can still enjoy the same sweets as Queen Elizabeth II. Recently the Royal family shared the recipe for cinnamon stars — their favorite Christmas cookies.

These are delicious gluten and dairy free cookies made with citrus meringue. The treats are easy to make and if you store them in an air-tight container they will keep for up to two months.

Grind the mixed peel until paste-like texture. In a large bowl beat the powdered sugar, egg whites, and lemon juice until soft peaks. Set aside ⅓ of the meringue. Add the rest of the ingredients to the bowl.

Knead a dough. Place it onto a piece of baking paper and cover with another piece of baking paper. Roll out the dough. Remove the paper, thinly spread the rest of the meringue on top. Place in the fridge for at least 1 hour. Cut out the cookies.

Bake in the oven at 325 °F (160 °C) for about 15 minutes. Leave to cool for half an hour before removing the cookies from the baking sheet.
