Transitioning from summer to fall is never easy. The weather won’t seem to make up its mind, and your wardrobe boasts both chunky-knit sweaters and summer dresses. During that transition, pumpkin spice starts to make its way into practically everything, from coffee to desserts, and hey, we’re here for it! To help prepare you for this year’s pumpkin spice season, here is a recipe for the most over-the-top treat you’ve ever tried — pumpkin cheesecake dessert lasagna.

People are creatures of comfort — we stick to what we know. But if you feel adventurous enough to spice things up when it comes to indulgent treats, this fall version of the dessert lasagna will blow your mind. With alternating layers of graham cracker, cream cheese, spicy pumpkin mousse, caramel, and pecans, this is the most decadent dessert you’ll have on your table this season. Best of all, the recipe is super simple and doesn’t even require an oven.

Steps

1
Done

Using a blender, beat softened cream cheese and sugar until light and fluffy. Gradually add heavy cream and continue beating until stiff peaks form.

2
Done

In a medium bowl, combine whole milk, vanilla pudding mix, pumpkin puree, and pumpkin pie spice and whisk until creamy.

3
Done

Spread a thin layer of cream cheese mixture in a 9x13-inch baking dish. Top with a layer of six graham crackers. Follow with half of the pudding mixture and coat with half of the cream cheese mixture. Drizzle with half of caramel and repeat, ending with a cream cheese layer. Reserve remaining caramel until ready to serve.

4
Done

Cover with cling film and pop in the fridge for at least 4 hours or overnight.

5
Done

Top with remaining caramel and garnish with chopped pecans before serving.

I am an English major with a love of languages and fiction, and with an incurable travel bug. In my free time, I read fantasy, drink copious amounts of coffee, and like to go see movies. Culinary art means everything to me. My main hypostasis is the taster, though. The music school has taught me to appreciate the symphony of airy meringues, to create harmonious overtures of light snacks, hard rock of meat, fish, and vegetables on the grill. Choir classes have accustomed me to hear and feel the people nearby and create perfect harmonies of sounds.
