Life is full of surprises, and we must be prepared for the unexpected. Everyone has had situations when their relatives or friends show up at their doorstep unexpectedly. As a hospitable host, you want to treat them to something delicious. Egg yolk sponge cake roll with jam will make an excellent dessert, as it is quick to make and tastes magnificent.

This fail-safe egg yolk sponge cake turns out perfect every time. It rolls easily and does not break. Moreover, eggs give it a beautiful golden color, and any preserve or jam will make a superb filling. If you wish, you can prepare a more elaborate cream to make the roll even more delicious. Separate the egg yolks from the egg whites, add a pinch of salt and whisk into a lush foam using a mixer. Pour in 2 oz (60 g) of sugar and continue whisking. The mass should double in size.

In a deep bowl, beat the egg whites for 1 minute. Divide the remaining sugar into three parts and gradually add to the egg whites, continuing to beat until stable peaks.

Add the yolks by gently mixing the mass with a silicone spatula clockwise. Add sifted flour and baking powder.

Combine milk and sunflower oil. Add a few tablespoons of egg dough to the mixture, stir, and then pour in the rest of the dough and mix until uniform.

Evenly spread the dough on a baking sheet lined with parchment. Bake for 30 minutes at 340 °F.

Place the hot sponge cake on clean parchment paper and remove the one you used to bake it. Make a few shallow cuts on the surface, brush with jam, and swirl into a tight roll. Let cool and then pop in the refrigerator for an hour.

You can use the tender egg yolk sponge to make cakes and other desserts. It retains its shape perfectly, does not crumple, and looks beautiful when cut into pieces. Swiss roll with jam is an excellent treat for holidays or an ordinary day. It will make your tea-drinking especially enjoyable.
