We often marinate potatoes in a mixture of spices before roasting. Thus, an ordinary dish turns into a phenomenal meal. Imagine: Italian seasoning or herbes de Provence, a little ground black pepper, chopped herbs… Wait a quarter of an hour, pack in a sleeve, and pop in the oven. This fail-safe method never let anyone down. Today, however, we will be betraying the beloved recipes by exercising a different way of making oven-roasted new potatoes.

We all know to marinate meat in beer — it becomes softer and juicier. However, did you know that you can (and should) do the same with new potatoes?

Thoroughly wash new potatoes and cut them into wedges without removing the skin.

Transfer into a deep bowl, add spices and toss to coat.

Spread a sheet of foil on the countertop. Fold it so that there is a deepening in the middle. Place the potatoes inside and pour in the beer. Tightly gather the foil around the edges.

Preheat the oven to 360 °F. Roast the potatoes for 25 minutes.
