Green buckwheat has become my new obsession not so long ago. So far I’m making cookies and raw cakes with this wonderful product, but I’m still planning on mastering more recipes with it.

Today Cook It would like to share with you a recipe for simple and delicious cookies with green buckwheat.

Grind dry buckwheat and cashews until flour texture in a coffee grinder or in a high speed blender. Dates can be chopped in a blender. Now mix all the ingredients.

Take a small part of the mixture, make a ball, squeeze it, even the edges out.

Lay the cookies on parchment paper or a silicone mat and put in the oven.

Attention! Heat the oven at about 320 °F (160 °C) for 10 minutes. Keep an eye on the cookies so that they don’t turn brown.
