A financier is a bite-sized light and moist cake with a crisp exterior dating back to the 17th century France. Traditionally, the French baked financiers in small rectangular cake pans, so their shape resembled bars of gold, hence their name. Nowadays, people tend to use an everyday muffin pan for their preparation. Regardless of the form, one thing is for sure: lemon financiers are delicious.

Preheat the oven to 465 °F. Lightly grease and flour financier molds or a regular cookie pan.

Combine both types of flour and powdered sugar in a bowl.
