There are so many roasted potato recipes on the Internet. Should you try each one of them? Probably not. But you definitely won’t regret giving these roasted fingerling potatoes with garlic butter a try.

Such a flavorful and versatile side dish can be served with almost anything. And adding garlic takes these crispy veggies to the next level.

Place the butter in a large microwave-safe bowl. Microwave until fully melted.

Into the bowl with butter add the potatoes cut in half lengthwise, minced garlic, olive oil, salt, and black pepper.

Toss to coat the potatoes. Line a baking sheet with aluminum foil. Transfer the potatoes to it and spread out evenly.

Roast at 400 °F (200 °C) until you can easily pierce the potatoes with a fork. Garnish the dish with finely chopped parsley.

For better results try not to crowd the baking sheet and make sure to toss the potatoes halfway through roasting. Bon appetit!
