Lava cake is a soft airy cupcake with a liquid mouth-watering filling that flows like lava from an erupting volcano. This dessert with filling resembles cakes with a surprise. No one is going to guess that a delicious filling may be hidden inside this vanilla lava cake.

The filling should be thick enough — somewhat like peanut butter, so that it doesn’t leak out too much. We offer you the option of a vanilla dessert with cream, which can be a great start to your morning or a pleasant end of the dinner.

Combine flour, baking powder and salt in a deep bowl.

Mix ½ cup (100 g) of butter with sugar and chop into crumbs using a mixer. Add 1 egg, pour in 1 teaspoon vanilla extract, ¼ cup of milk and whisk until thick and creamy. Gradually pour the flour mixture while continuing to beat at low speed.

Mix ½ cup (100 g) of butter with cream cheese and powdered sugar. Beat with a mixer, adding ½ teaspoon vanilla extract and heavy cream. You should get a smooth filling.

Grease a cupcake pan with butter, roll an egg-sized balls from the dough, flatten them a bit and place on the bottom of each indentation. Smooth out the dough surface and make small sides.

Put the cream filling inside, make small flatbreads again and cover the filling with them, sealing the edges of the lava cakes. Place for 20 minutes in an oven preheated to 350 °F (180 °C).

To get cupcakes from the pan, cover them with a cutting board, flip over and knock on the pan. These lava cakes go well with fruit, a scoop of vanilla or caramel ice cream, or just sprinkled with powdered sugar.
