Pie recipes are in demand at any time of the year and we bake them for any occasion. Today we are going to share a festive and elegant option, which is, however, quite easy to make. To cook this chicken and sinach pie you will need a bundle of spinach, some cauliflower and a chicken breast.

The pie filling is not ordinary: the main part is chicken rolls, which we topped with white inflorescences of boiled cauliflower. It turns out delicate, juicy and colorful (partly due to spinach, which gives the dough a vibrant color). We recommend roasting pumpkin seeds in a dry pan to enhance the flavor.

Crust

Grind the spinach with a blender into a puree adding kefir. Add melted butter, one egg yolk and mix. Then pour in flour, sifted with baking powder, ½ teaspoon salt and ½ teaspoon sugar. Knead a thick shortbread dough.

Take a small piece of dough a little less than 3 ½ oz (100 g) in weight. Roll out the dough into a layer, line a springform pan with it so that high sides are obtained, and leave in the refrigerator for 30 minutes.

Filling

Meanwhile, boil the cauliflower for several minutes, and fry the onions until transparent in vegetable oil. These ingredients will come in handy later.

Beat the sour cream with egg, salt and pumpkin seeds.

Cut the chicken into steaks. Beat each one through a plastic wrap so that the steaks don’t fall apart. Season with salt and pepper to taste and wrap some fried onions in each steak.

Place the rolls on the dough, as shown in the video, season with salt again and spread the fried onions on top. The last layer should consist of boiled cauliflower. Pour the filling with the egg mixture and decorate with the rest of the dough on top (it can be leaves, flowers, some patterns and so on). Bake the pie for 1 hour at 350 °F (180 °C). Enjoy your meal!

The dough doesn’t have to be colored with spinach, a classic quiche dough recipe is also suitable, but then the pie won’t look so impressive. As a natural dye, mashed carrots or pumpkins are often used. In addition, they will add a sweet hint to the dough. This is definitely one of the most beautiful homemade baking recipes. And just as tasty!
