Pastry with apples is always relevant: from a homemade apple tart to a classic french charlotte. And if you really lack a holiday spirit, a magnificent apple tart will bring it straight to your dining room.

Sweet and sour apple filling with shortcrust pastry is delicious on its own, and when combined with delicate chocolate and cream filling, it transforms into something heavenly. Try this amazing dessert and see for yourself.

Cream

The day before making the tart, make the cream. To do this, pour gelatin with ¼ cup (50 ml) of heavy cream. Bring ¾ cup (200 ml) of cream to a boil and add chocolate pieces. Mix well with a whisk. Heat the gelatin and stir until completely dissolved. Pour into chocolate mixture, mix and put in the refrigerator for 12 hours.

Crust

Mix the flour with 4 ¼ tablespoons of butter, diced. Add a small egg, 5 ⅓ tablespoons of powdered sugar and 2 ½ teaspoons of almond flour. Knead the dough, roll it into a ball, cover with plastic wrap and put in the refrigerator for 2 hours.

Take a 7-inch springform pan (18 cm) and grease it with butter. Place the dough in it, making high sides. Prick the bottom with a fork. Cover with baking paper and pour with dry peas. Bake at 350 °F (180 °C) for 50 minutes. Then take out the peas and let cool completely.

Filling

Peel and dice apples. Mix with ½ cup (70 g) of powdered sugar and cinnamon. Fry with 1 ½ tablespoons of butter for 5 minutes.

Take out the cream from the fridge and beat well. Sprinkle the bottom of the crust with the rest of the almond flour. Distribute the apple filling and let cool.

Put the cream on top, smooth out and put in the refrigerator for 1 ½ hours. Decorate the tart as you want.

At first glance, the recipe for this apple tart seems complicated. It has long cooking and preparation time. But the beauty of this bake is that it’s almost impossible to spoil. Your efforts are going to pay off for sure!
