Puff Pastry – 2 1⁄4 lb (1 kg) Frozen
Butter – 1⁄4 cup (60 g) Unsalted
Yellow Onions – ⅓ cup (50 g) Diced
Carrots – 2 Medium, sliced
Celery – 1 stalk Sliced
Garlic – 2 cloves Minced
Wheat Flour – ⅓ cup (40 g)
Thyme – 1 ½ tsp Minced, fresh
Parsley – 1 tbsp Minced, fresh
Salt – 1 tsp
Ground Black Pepper – ½ tsp
Chicken Broth – 1 ¾ cups (420 ml)
Cream – ½ cup (120 ml)
Chicken – 3 cups (450 g) Or turkey, shredded
Peas – 1 cup (150 g) Frozen

Of course, this recipe is a classic, but today we are going to cook a chicken pot pie using frozen store bought puff pastry. This will make the cooking process even easier!

Such a comforting meal, and so easy to make! Your children are going to love it! You can shorten the preparation time of this recipe if you have some leftover chicken in your fridge.

Defrost the puff pastry. Divide the pastry into two and slightly roll out each part. Cover each part in plastic wrap and refrigerate while making the filling for your pie.

To a large preheated frying pan add butter, onion, carrots, celery and garlic. Cook until tender, occasionally stirring. Add in flour, chicken broth, heavy cream, and all the spices, whisk it thoroughly. Make sure there are no lumps, and simmer the sauce until it’s thickened.

Add shredded chicken and peas. Remove the pan from heat and set aside. Preheat oven to 400 °F (200 °C).

Remove the dough from the refrigerator. Roll out the dough into a 12-inch circle (30 cm). Put the dough into a pie pan. Trim the edges of the dough with a knife if needed. Put the filling into the pie.

Roll out the second dough sheet and cover the pie with it. Trim the edges. Seal the edges with a fork or fingers. Cut a few small slots in the middle of the crust using a knife. Beat an egg and grease the crust with it.

Bake for about 45 minutes. Let the pie slightly cool, then cut it into slices and serve.

Serve this delicious and nourishing pie with the side dish of choice. Any type of green salad works really great. Bon appetit!
