Nothing feels as festive as a cake, not even ice cream in summer. Many of us during the hot season simply forget how great jelly dessert recipes can be! They are quick-to-make, do not require flour, baking powder, oven, extraordinaty cooking skills, and on top of that they look amazing. You just need to follow the instructions, maintain the right proportions and have a blender at hand.

This recipe will amaze you so much that you’ll certainly want to cook it more than once and treat your friends! It is based on a bouncy mousse made from cottage cheese, yogurt and berries (can be replaced with any fruit). This jelly cake is so fresh, low-calorie and full of vitamins that it can easily compete with ice cream on a hot summer day!

Add 1 ¼ tablespoon of gelatin to 6 ½ tablespoons of drinking yogurt, mix and leave to swell. If you use firm yogurt, then mix gelatin with ½ cup of warm water.

Beat cottage cheese, powdered sugar and the rest of the yogurt with blender. Microwave the gelatin several times for 10 seconds until completely dissolved. Stir the mixture each time.

Add dissolved gelatin to the yogurt mixture, mix and refrigerate for 15 minutes for easy gelling.

Mix the rest of gelatin with water and heat until completely dissolved, as described above. Grind strawberries with sugar into puree and then mix it with the gelatin.

Pour a slightly frozen yogurt mixture into a bundt pan. Dip the crackers in warm milk and fit them in the mixture, as shown in the video. Gently pour in the strawberry layer, leaving about 3 tablespoons of puree for decoration.

Tap the pan on the counter so that the mixture is evenly distributed, then refrigerate for 3 hours. Before serving, immerse the pan in a bowl of hot water for 15 seconds, cover with a platter and turn over. Top the cake with the rest of berry puree to get beautiful swirls.

Crackers in a cold dessert significantly reduce cooking time. You can use them whole, or grind them into crumbs and make a base for a cheesecake or jelly cake. Such desserts that require no baking are great if your child is a picky eater. So try this recipe and treat yourself and your family with a healthy dessert!
