Love for eggplant does not come immediately, but if it does, it’s forever. Fans of this unpretentious vegetable are ready to eat it all year round. From one large eggplant you can prepare a hearty meal for the whole family at any season. Ready to try it out? This time a simple recipe for eggplant-stuffed bell peppers awaits you. It looks quite festive, but it tastes even better.

In fact, these are all the same stuffed peppers, only with vegetable stuffing. They are served as an independent light dish (for example, for dinner) or as a cold snack.

Wash eggplants and cut into small cubes. Fry in vegetable oil until soft, add chopped onions and grated carrots, salt, pepper and simmer for several minutes under the lid.

Grate the tomatoes in the stew and simmer the mixture under the lid for another 10 minutes.

In the meantime, prepare the peppers: cut off the tops and deseed the veggies.

Stuff the peppers with stewed eggplants, put them in a deep baking dish with the sharp ends down, fill the dish with water almost to the brim and put into an oven for an hour at 350 °F (180 °C).

Serve the eggplant-stuffed peppers sprinkled with finely chopped herbs.

Cooking eggplant-stuffed peppers shouldn't be limited to an oven. You can boil the peppers in a saucepan, pour them with broth or tomato sauce with sour cream, cook them in a slow cooker and even in a steam cooker to preserve as much taste as possible. Note that they are even tastier when cooled than while hot. Bon Appetit!
