Bay Leaf – 3

Lohikeitto is a traditional Finnish salmon soup. This dish is rich in flavor and has creamy texture.

To make such a tasty treat you only need half an hour. The dish is pretty high in callories. But as an exception, you can treat yourself to this classic Finnish recipe on some holiday and surprise your family with this yumminess.

Coarsely grate the carrots and dice the onions. Saute the onions and carrots with oil until soft in a pot which you will use to make the soup.

When the onions become translucent, add the diced tomatoes to the pot and stir with a spatula.

Pour filtered water into the pot. Peel the potatoes and cut them finely. Add the potatoes to the pot, season the soup with salt.

Cook the soup for 15 minutes, then add medium-sized pieces of salmon. Stir the soup and add dried or fresh chopped herbs.

Add bay leaf and heavy cream to the soup, cook for another 10 minutes over low heat.
