Such a vinaigrette dressing is versatile. Whether you decide to make a kale salad with it, drizzle it over some grilled veggies, or add a little to baked fish, it will work great! Plus it’s homemade which means you know all the ingredients and can be sure they are only the good ones.

Take a mixing bowl. Finely grate the zest of a lemon in it. Add in about 3 tablespoons of lemon juice. Add in the acnhovy paste and finely chopped garlic. If you're using anchovy fillets, also chop them until they are paste-like.

Finally add the olive oil, vegetable oil, mustard, Kosher salt and black pepper to the bowl. Beat with a whisk to combine.

You can keep the salad dressing in the fridge for up to 1 week. Use an air-tight container or a jar. Don't forget to shake it before adding to dishes. Bon appetit!
