Can’t decide between pasta and salad? No problem! Meet the ultimate Italian pasta salad recipe. The dish comes together in just half an hour which makes it a perfect quick lunch option.

Feel free to change the ingredients. Sun-dried tomatoes are a great substitute for olives. You can also experiment with cheeses. The dish becomes even tastier after it sits in the fridge for 30 minutes.

Steps

1
Done

Add all the dressing ingredients to a small bowl and whisk to combine. Add in the finely chopped onion. Set aside.

2
Done

Cook the rotini pasta until al dente. Drain the water. Place the colander with pasta in a bowl filled with ice-cold water. Let it cool for a few minutes.

3
Done

Cut the tomatoes, cucumber, mozzarella, salami, and olives into small pieces. Chop the parsley leaves. Add everything to a large bowl. Add in the drained cool pasta. Pour in the dressing and stir to combine.

4
Done

To make the dish more flavorful place the salad in the fridge for at least half an hour.

Want to experiment with ingredients? For the perfect formula, use about 1 lb (450 g) of toppings for every 8 oz (230 g) of dried pasta. Make sure that half of the toppings are meat, cheese, or other savory foods. Did you like the recipe? Leave your comments below.

Like many people nowadays, I love to explore new places. My favorite type is slow travelling, when you can really blend in with locals and learn about new cultures and languages. But I think there are also perfect times for enjoying freshly baked pastry, a cup of fragrant coffee, and a good movie in the comfort of your own home. I guess I'm kind of a cultural omnivore, and I watch different types of movies, but the ones about art and food inspire me the most!
