If you want to surprise your family with a quick and unique breakfast, try this delicious pizza recipe with hashbrown crust. To make the unusual crust use frozen shredded potato rounds.

We decided to use scrambled eggs, bacon, cheddar, and chives as toppings, but feel free to use any foods you have at hand.

Coat a baking sheet with oil. Place the potato rounds in a single layer. Bake at 450 °F (230 °C) for 10 minutes. Flatten the potatoes with a wooden spoon and bake for 20 more minutes.

Meanwhile, cook the eggs until very soft scrambled. First place about ¾ of the cheddar on the potato crust. Then add the eggs and bacon on top. Sprinkle the rest of the cheese and bake at 450 °F (230 °C) for 10 minutes. Serve sprinkled with chopped fresh chives.
