The bright orange root plant brought from Peru quickly became world famous. Its sweet, pumpkin-like taste and cheerful color of pulp leave no one indifferent! Fans of healthy eating have long known that sweet potato is a tasty and healthy substitute for traditional potatoes. I especially love to treat myself to a sweet potato casserole once in a while.

Today Cook It has prepared for you a recipe for a simple and satisfying dish baked in the oven. Colorful multi-layer sweet potato casserole will become not only a healthy breakfast, but also an attractive dish on the festive table.

Slice sweet potatoes along. Sprinkle 1 teaspoon of salt and 1 teaspoon of ground black pepper, pour 1 tablespoon of olive oil and mix well so that the spices are evenly distributed on the slices of potatoes.

Put potato slices on parchment paper at a distance from each other and bake in an oven preheated to 425 °F (220 °C) for 8–10 minutes.

Finely chop a bell pepper and fry it in a pan for about 5 minutes to soften. In a bowl combine 8 eggs, a diced tomato, chopped scallions, slices of bell pepper. Add garlic powder, 1 teaspoon of salt, 1 teaspoon of black pepper, milk and beat the ingredients with a whisk.

Put the baked slices of sweet potato on the bottom and walls of the baking dish so that they overlap. Make sure there are no gaps between the slices. Place thin slices of ham, washed and dried spinach leaves, and a layer of potatoes on top.

Pour in the egg mixture, then again the ham and potato slices. Fold the remaining pieces of sweet potato so that they do not burn. Place the casserole in an oven preheated to 400 °F (200 °C) for 20 minutes.

Cover the dish with a plate, flip the dish over so that the casserole is on the plate.

Serve hot immediately or refrigerate. If you want to complement the dish with cheese, we recommend putting it at the end before the last layer of sliced sweet potatoes. This trick will help to perfectly "seal" the potatoes so that the casserole won’t be burnt.
