Some may know meringues as the forgotten cookies due to their long cooking duration in the oven. Forgotten they might be, but not by Cook It! Instead of whipping egg whites with sugar and popping them in the oven for an insurmountable amount of time, we present to you a recipe for meringues in the microwave, which takes 10 minutes at most.

Meringue is the lightest, airiest alternative to sugary, buttery cookies. The name meringue for this sweet first appeared in print in a cookbook back in the 17th century. Nowadays, it is something even a child can master.

Mix the egg white with powdered sugar until homogeneous. The batter should turn out quite thick.

Form small balls. Line a plate with a napkin and place them on top 2 inches apart from each other. Microwave for 2–3 minutes.

You can flavor meringues in the microwave with vanilla or coconut extract. By the way, in order not to overcook them, better check on them continuously.
