The Italian analogue of dumplings won the hearts of many foodies throughout the world.  The secret of their popularity is simple: gnocchi are very tasty and extremely easy to make. There are a lot of options for this dish. Today we are going to be cooking beet and curd gnocchi.

You can make gnocchi from almost any food, but such ones from cottage cheese and beets will not only have an amazing taste, but an excellent presentation. And you can safely treat vegetarian friends with such a dish.

Boil the beets, cut them into large cubes and grind in a blender. Transfer the mixture to cheesecloth and drain the beetroot juice.

Mix the cottage cheese, ground beets, egg, flour, 1 ¾ oz (50 g) of parmesan, salt, pepper and Herbes De Provence.

In a pot of boiling salted water, add gnocchi formed with spoons and cook for 7 minutes under the lid. Then use a slotted spoon to catch them.

Heat the butter and olive oil in a pan, place the gnocchi in there, pour the cream over them and fry until cooked. Sprinkle the finished dish with the rest of the parmesan.

For the preparation of beet-curd gnocchi, it is best to use a mixture of sage, marjoram and basil, and if you like rosemary, feel free to add it too. Serve the dish with your favorite sauce and delight loved ones and guests with it.
