If you’re a fan of homemade fast food, these breaded eggplant sandwiches will hit the spot. Tender veggies wrapped in crispy breading make a perfect combination with the melted mozzarella filling.

Even hardcore meat eaters will love this deep fried vegetarian snack. Be sure to give it a try!

Slice the mozzarella balls and leave them to drain for half an hour. Slice the washed eggplants. Season them with salt. Place them in a colander with something heavy on top. Leave to drain for half an hour, then rinse and pat them dry.

Make sandwiches out of 2 eggplant slices and one mozzarella slice. Dredge the sandwiches first in flour, then in beaten eggs with salt and pepper, and, finally, in bread crumbs.

Cook the veggies on both sides in a large amount of oil in a cast-iron skillet. Let them drain on paper towels for a little and serve hot.

Cheese and eggplant make a great combination. Try serving these fried vegetable sandwiches with tomato sauce.
