Recipe
In the classic version of this dish, the recipe uses guanciale. Also, the sauce has a mixture of Parmesan and Pecorino Romano. Some replace guanciale with pancetta. But we decided to transform the Italian recipe and make a delicous carbonara with chicken.
You will need a chicken breast and bacon. For the sauce take only Parmesan, or you can use your favorite hard cheese. Add cream to the eggs, this way the sauce is creamier.

Cut the chicken breast into thin slices, season and add salt. Grate the Parmesan, and set aside half of it. |

Pour ¼ cup (50 ml) of water from the pasta into a cup, and drain the rest. Put the pan on heat again, and immediately pour the pasta to the meat. Add in the egg mixture constantly stirring the dish. Gradually add the water 1 tbsp at a time. |
