Cheese is a well-loved staple food in every kitchen, and we love dishes with this ingredient as well! Today, we will share with you a recipe for a delicious hot appetizer — a cheese pie. Delicate thin dough coupled with juicy cheesy filling make this an excellent savory pastry!

This miracle dish’s name is Saburani, and it is a traditional Ossetian pie. Try out the recipe and surprise your family with this fantastic, finger-licking pastry.

First and foremost, prepare the dough. Sift the flour on the table and make a little mountain with a hole in the center. Pour water, two eggs, salt, and olive oil into it. Knead the dough and let it sit for 30 minutes. Divide the dough into five portions: four equal parts and the fifth — larger than the rest. Roll each portion into a thin layer.

Boil water in a pot and place each layer of dough there. Do not turn off the heat — the water should continue to boil. Remove the dough and transfer it to a container with cold water for about 30 seconds, then let it dry on a towel.

While the dough is drying, grate hard cheese and suluguni on a coarse grater, and mix thoroughly.

Make the pie. Place the largest layer of dough in a baking dish greased with butter (the edges should hang down). Lay a quarter of the grated cheese on it and sprinkle it with grated butter. Do this with every layer of dough except the last — it will be used to cover the pie. Roll up the edges of the large layer, fix them with toothpicks, and brush everything with the whipped yolk.

Bake the pie in the oven at a temperature of 360 °F for approximately 30–40 minutes until it browns. When the pie is done, remove the toothpicks, cut the pastry into pieces, and serve! Remember that this is a hot appetizer. Bon appétit!
