First and foremost, prepare the dough. Sift the flour on the table and make a little mountain with a hole in the center. Pour water, two eggs, salt, and olive oil into it. Knead the dough and let it sit for 30 minutes. Divide the dough into five portions: four equal parts and the fifth — larger than the rest. Roll each portion into a thin layer. |

Make the pie. Place the largest layer of dough in a baking dish greased with butter (the edges should hang down). Lay a quarter of the grated cheese on it and sprinkle it with grated butter. Do this with every layer of dough except the last — it will be used to cover the pie. Roll up the edges of the large layer, fix them with toothpicks, and brush everything with the whipped yolk. |
