Add these delicious squash pancakes with filling to your collection. We suggest making them with baked chicken, pickled onions, and tomatoes, but you can experiment with other ingredients. For instance, you could put fresh cucumbers and canned tuna or fried veal with crispy lettuce leaves inside the pancake.

Coarsely grate the squash, sprinkle it with salt, and let sit for approximately 10 minutes, so it starts to release juice.

Drain the juice from the squash. Add eggs, pressed garlic, 1 teaspoon of sugar, a pinch of salt, baking powder, chopped dill, kefir, vegetable oil, and flour. Mix the ingredients thoroughly. The consistency of the dough should be like that for hotcakes. If necessary, add more flour. Let it sit for 10–15 minutes.

Rub the chicken fillet with salt and a mix of your favorite herbs (we recommend Herbes de Provence), then bake at 360 °F for 25 minutes.

Mix apple vinegar and water, add a pinch of salt, and ½ teaspoon of sugar. Slice an onion into rings and marinate them in the mixture for approximately 10–15 minutes, then cut tomatoes into half rings.

Heat a pan and grease it with vegetable oil. Distribute a thin layer of squash dough over the surface of the pan. Brown the pancakes on both sides, approximately 3 minutes each, and then brush them with butter.

Put onion, chopped chicken breast, and tomatoes on one half of a pancake, pour the mayonnaise on top, then fold it in half. Squash pancakes with delicious filling are ready!
