Did you know that pastries with cottage cheese are as healthful as fresh cottage cheese? Luckily, they retain the ingredient’s beneficial properties after baking in the oven yet they taste even better. A cottage cheese bake can make a tasty morning meal or a light snack to go with your warm drink. If you have cottage cheese lying around in the fridge, and you don’t feel like eating it as it is, it is the perfect time to try something new.

This recipe yields the most delicate cottage cheese bake you’ve ever tasted. The best part is that you don’t have to bother with yeast dough. This treat will become an instant favorite in your family, so make sure to bake enough!

Steps

1
Done

Remove the butter from the fridge to let it soften; cut it into pieces.

2
Done

Place cottage cheese in a deep bowl, add sugar, vanilla, and butter, and crack in an egg. Blend with an immersion blender until uniform. Alternatively, rub the cottage cheese through a sieve, then add the other ingredients and rub until smooth.

3
Done

Sift in flour mixed with baking powder and knead a smooth, soft, and slightly sticky dough.

4
Done

Rip off a third of the dough and roll it out on a floured working surface into a thin layer (about one-fifth of an inch).

5
Done

Grab a glass or cookie cutter and cut out circles. Return the trimmings to the rest of the dough.

6
Done

Form roses from the circles: arrange 5 circles in a row, slightly overlapping. Form into a roll and cut in half.

7
Done

Line a baking pan with parchment paper and snugly arrange the roses in the bottom.

8
Done

Mix an egg yolk with half a teaspoon of water or milk and brush the top of the cake with the mixture.

9
Done

Bake at 355 °F for 35 minutes.

The cottage cheese bake comes out golden on the outside and soft on the inside. Once done, remove it from the baking pan and invite your loved ones for a cup of tea. Sprinkle with powdered sugar to make the treat more festive!

I am an English major with a love of languages and fiction, and with an incurable travel bug. In my free time, I read fantasy, drink copious amounts of coffee, and like to go see movies. Culinary art means everything to me. My main hypostasis is the taster, though. The music school has taught me to appreciate the symphony of airy meringues, to create harmonious overtures of light snacks, hard rock of meat, fish, and vegetables on the grill. Choir classes have accustomed me to hear and feel the people nearby and create perfect harmonies of sounds.
