The dish combines crispy and golden meat pancakes with vegetable filling, which makes it a perfect hearty breakfast. You can also use this batter recipe to make a regular stack of pancakes. Slice the eggplant and mix with salt. Set aside for 10 minutes to let all the bitterness come out, then squeeze out the liquid.

Beat the eggs with a pinch of salt and milk. Add the flour, mix well until smooth, add the ground beef, and mix again.

Pour the batter in an oiled pan (about one and a half ladles at a time) and fry on each side until golden brown.

Fry the eggplant in oil, slice the tomatoes. Now you need to mix the mayonnaise with pepper and minced garlic. After that, you can start to form a snack.

Spread a little of the mayonnaise mixture on each pancake, put a couple of eggplant slices, and a couple of tomato slices on top. Roll up the pancake. The meal is ready to serve!

As you might have guessed, the filling can be very different: cottage cheese with herbs, cheddar with ham, or stewed vegetables. As a spread, cream cheese and guacamole are especially good.
