The best summer pie has little crust and lots of filling. Our recipe matches the criteria. This crumble pie with berries will delight you with its juicy and fragrant filling.

The crumb should not cover the filling too much, but only slightly drown in caramelized berries. To add flavor to the dessert, we used some ground almonds and cinnamon. Such a wonderful combination of ingredients makes a truly magical dessert.

Steps

1
Done

Combine butter, an egg yolk, ⅓ of powdered sugar, half vanilla and flour. Blend it.

2
Done

Knead the dough. Divide it into three equal parts. Combine the two, cover the dough with plastic wrap and refrigerate for 30 minutes.

3
Done

Cut small strawberries in half and large ones in quarters. Add currants, brown sugar and vanilla. Boil the berries over medium heat so that the currants begin to boil. Remove excess liquid with a sieve. Save the syrup.

4
Done

Roll out a large piece of dough into a ¼ inch (½ cm) thick layer. Transfer the dough to a 10-inch (24 cm) springform pan and form the sides. Poke through with a fork.

5
Done

Cover the dough with parchment paper and pour pie weights on top. Bake in an oven preheated to 350 °F (180 °C) for 10-15 minutes. Then remove the paper and weights and cook for another 10 minutes.

6
Done

Sprinkle the crust with ground almonds, add the filling and pour 3 tbsp of the syrup. Roll out a smaller part of the dough and cut into 1 ½ inch (4 cm) pieces. Spread them randomly over the berries.

7
Done

Beat the egg white and brush the squares with it. Sprinkle the cinnamon and powdered sugar mixture over the dessert. Cover the edges of the finished dough with foil. Bake for 20 minutes.

When the pie has cooled, you can serve it with scoops of ice cream topped with berry syrup. You can also use a combination of cherries and plums for the filling, or replace the currants with gooseberries.

Like many people nowadays, I love to explore new places. My favorite type is slow travelling, when you can really blend in with locals and learn about new cultures and languages. But I think there are also perfect times for enjoying freshly baked pastry, a cup of fragrant coffee, and a good movie in the comfort of your own home. I guess I'm kind of a cultural omnivore, and I watch different types of movies, but the ones about art and food inspire me the most!
