There are many recipes for potato casseroles. Most often, we use mashed potatoes for them. But for today’s recipe it’s best to use slices. We guarantee that you’ll fall in love with these carbonara potatoes.

The sauce for this dish is very similar to the one used in pasta carbonara. The dish turns out very tender and at the same time satisfying, which is ideal for a family dinner. Instead of turkey, you can use chicken, and replace the bacon with smoked pork breast. You can use any hard cheese, but Parmesan works best.

Steps

1
Done

Cut the peeled potatoes into circles or large cubes and lightly boil in salted water (about 10 minutes). You can boil the whole potato, but until half-cooked, and then chop.

2
Done

Combine sour cream, grated cheese and egg, lightly salt and pepper.

3
Done

Heat the pan, melt the butter and fry the chopped onion on it. Cut the turkey into cubes and also place into the pan. Stew for 10 minutes.

4
Done

Fry bacon or smoked pork breast in a dry skillet.

5
Done

Put potato slices in an oiled baking dish. Pour the sour cream mixture on top, sprinkle with turkey and bacon. Bake for 15 minutes at 400 °F (200 °C), sprinkle with parsley and cook for another 15 minutes at 350 °F (180 °C).

Cool the casserole slightly and serve with fresh vegetables or as a side dish for baked meat.

Like many people nowadays, I love to explore new places. My favorite type is slow travelling, when you can really blend in with locals and learn about new cultures and languages. But I think there are also perfect times for enjoying freshly baked pastry, a cup of fragrant coffee, and a good movie in the comfort of your own home. I guess I'm kind of a cultural omnivore, and I watch different types of movies, but the ones about art and food inspire me the most!
