Spring has come, which means the time for diets and intensive training. It’s the hardest thing for fans of sweets. In search of diet pastry recipes, pay attention to another variant of the famous cookie lemon and dried cranberries biscotti.

Sun-dried cranberries add sourness, and lemon zest will make the biscotti very fragrant. Just one bite of this crispy cookie, and you’re already in a small cozy cafe in Italy. A nice trip while having a cup of coffee, isn’t it?

Steps

1
Done

Sift the flour and mix with baking powder and sugar. Pour the beaten eggs into the dry mixture and mix.

2
Done

Add dried cranberries, almonds, lemon zest and vanilla extract. Knead the dough.

3
Done

Form two baguettes from the dough and place them on a baking sheet lined with parchment paper. Bake for 20 minutes at 350 °F (180 °C).

4
Done

Cut the finished baguettes into ¾ inch (2 cm) thick slices, place on the baking sheet and put back in the oven for another 10 minutes.

You can replace almond with walnut, or better yet use a mix. Biscotti is good with any filling: candied fruits, dried fruits and chocolate. Just choose your perfect flavor.

Like many people nowadays, I love to explore new places. My favorite type is slow travelling, when you can really blend in with locals and learn about new cultures and languages. But I think there are also perfect times for enjoying freshly baked pastry, a cup of fragrant coffee, and a good movie in the comfort of your own home. I guess I'm kind of a cultural omnivore, and I watch different types of movies, but the ones about art and food inspire me the most!

Howdy! This is kind of off topic but I need some guidance from an established blog. Is it tough to set up your own blog? I’m not very techincal but I can figure things out pretty quick. I’m thinking about creating my own but I’m not sure where to start. Do you have any ideas or suggestions? Cheers
