Norman apple tart is a simple dessert: thin crispy base, slices of caramelized apples, baked under a sweet buttery crust. It is tender, very juicy and fragrant.

There are no special recommendations for cooking. The only difference between our tart and the original one is that the French do not put cinnamon in apple desserts. But we felt the need to add a bit of this fragrant seasoning, which we often associate with apples.

Steps

1
Done

Pour sliced apples with lemon juice and simmer for 15 minutes in a pan with 4 tablespoons of butter, 3 tablespoons of sugar, cinnamon and vanilla sugar. Stir very carefully so that the fruit does not fall apart.

2
Done

In a deep bowl, mix 6 ½ tablespoons of butter, 2 tablespoons of sugar. Rub the ingredients until crumbs, pour about 3 tablespoons of ice water and knead the dough.

3
Done

Grease a baking dish with butter, transfer the dough and smooth it out with your hands. Put apples on the dough, after draining the juice in a separate container.

4
Done

Put in an oven preheated to about 350 °F (180 °C) for 45 minutes. Pour the remaining apple juice over the tart and sprinkle with sugar. Bake on the top level of the oven for another 3 minutes.

When the Norman tart has cooled, put it in the refrigerator for 4 hours: this way its taste and texture will become magical! When serving, you can sprinkle a bit of powdered sugar, top off with a scoop of ice cream or some whipped cream.

Like many people nowadays, I love to explore new places. My favorite type is slow travelling, when you can really blend in with locals and learn about new cultures and languages. But I think there are also perfect times for enjoying freshly baked pastry, a cup of fragrant coffee, and a good movie in the comfort of your own home. I guess I'm kind of a cultural omnivore, and I watch different types of movies, but the ones about art and food inspire me the most!
