Cut the pickles in half lengthwise and scoop out the seeds.

Fill one half of the pickle with about 1 oz (30 g) of thinly sliced corned beef, add 1 tablespoon of sauerkraut. Drizzle the pickle with 1 ½ teaspoons of Russian dressing. Cut a cheese slice in half, add it on top of the sandwich and cover everything with the other half of the pickle.

Slice the sandwich across and serve with potato chips and more Russian dressing for dipping.
