I’ve had a good harvest of bell peppers this year. While I’ve already canned some for the winter, there are still many left for my cooking experiments. Yesterday I stuffed vegetables with cheese. Today I decided to bake bell pepper boats. And they turned out amazing! The aroma brought my whole family to the kitchen.

The appetizer is very simple and quick to make. Quick frying of chicken in flour and spices makes the meat juicy and tender. And baked cheese, as always, makes vegetables and meat very flavorful. I will definitely make some more!

Cut the chicken fillet into small pieces and fry in vegetable oil. Add salt, seasoning and flour and thoroughly mix.

Add sour cream to the chicken and pour in water. Cook over medium heat until the sauce thickens, constantly stirring.

Wash the peppers, cut in half, remove seeds and stem. Place the halves into a baking dish.

Fill the peppers with the chicken filling, sprinkle with grated cheese, top off with tomato slices. Bake for 30 minutes at 400 °F (200 °C).

Such an appetizer from stuffed peppers can substitute a whole lunch. The healthy and not too high-calorie dish will delight even those who watch their waistlines. In addition, the peppers are very filling. Try them while they're still in season.

Like many people nowadays, I love to explore new places. My favorite type is slow travelling, when you can really blend in with locals and learn about new cultures and languages. But I think there are also perfect times for enjoying freshly baked pastry, a cup of fragrant coffee, and a good movie in the comfort of your own home. I guess I'm kind of a cultural omnivore, and I watch different types of movies, but the ones about art and food inspire me the most!
