Everyone knows that potatoes and cheese are a perfect flavor combination if you need to wow your guests. So today we would like to share with you a recipe for an elegant potato galette with cheese.

The dish turns out extra delicious if you use Comté cheese, but you can also substitute it for Gruyère or sharp cheddar.

Grate the cheese. Finely chop the chives to get 2 tablespoons. Peel the potatoes. Slice them using a mandoline or a sharp knife to get thin rounds. Place the potatoes in a bowl. Add the melted fat, salt, and pepper. Mix everything until evenly coated.

Line two baking sheets with parchment paper. Place a plate (10 inches) on the paper and trace a circle with a pen. Repeat with the second sheet of parchment paper. Flip the paper sheets over. Use these marks to make the galettes.

Divide the potatoes into 4 parts. You need to arrange them inside the circles. Make a layer out of 1 portion of the potatoes so that they slightly overlap. Sprinkle with ¼ of the cheese. Place the next portion of the potatoes on the cheese. Add another ¼ of the cheese. Then make the second galette with the rest of the ingredients.

Place the two sheets into the oven preheated to 425 °F (220 °C) and bake for 15 minutes. Rotate the sheets and bake for another 10 minutes. Top off the dish with chives and flaky salt. Cut the galettes into wedges and serve to the table.
