This potato pie is an appetizing and creative way to devour your favorite root vegetable. The technique is similar to that for making quiche, with one exception: the pie crust is made from potatoes instead of shortcrust pastry. The egg filling features fried onion with bacon coupled with grated Parmesan. You can, of course, swap it for any other hard cheese you fancy. Peel and boil the potatoes in water with salt and vinegar. Meanwhile, chop one garlic clove.

Grate boiled potatoes on a coarse grater. Add garlic, black pepper, salt, and one beaten egg; stir.

Grease a baking dish liberally with butter. Place the potato dough inside, forming the bottom and sides of the pie.

Chop the remaining garlic and sauté it in a skillet with warm olive oil. Chop onions and add them to the pan.

Slice bacon and stir it in, as well. Separately, whisk the remaining 5 eggs with some salt and pepper before adding milk and cream and whisking again.

Pour the egg mixture into the potato crust. Carefully add fried bacon and onion. Finely grate cheese and sprinkle it on top of the pie. Bake the dish at 390 °F for 45 minutes.
