Oven-roasted whole garlic is an effortless and tasty way to refresh various familiar recipes. When cooked slowly in the oven, garlic caramelizes and loses its inherent sharpness. Moreover, it acquires a delicate, rich flavor that makes it an excellent addition to virtually any dish. Because the vegetable softens, you can add it to sauces or bread spreads. We recommend using it to make an incredibly delicious homemade roasted garlic hummus.
Roasted garlic easily replaces sesame paste in hummus. At the same time, the dish acquires a rich garlic note, which does not disrupt the taste of other ingredients. You can serve this healthy plant-based dip to guests who have not yet tried traditional hummus, or to those who don’t particularly enjoy sesame in dishes.

Cut off tops of garlic heads, sprinkle them with olive oil, season with salt, and wrap in foil. Roast in the oven preheated to 390 °F for 30 minutes. |

Place cooked chickpeas in a blender bowl, add olive oil, roasted garlic, lemon juice, salt, and thyme. |

Sprinkle the homemade hummus with finely chopped parsley and serve it with hot pita bread, pita chips, or vegetables. Store it in the refrigerator for up to three days in a tightly closed container.
