Freezer meal stuffed bell peppers is a great solution for every busy person. Even when frozen, it is almost a complete dish. Just stew it a bit and it’s ready to serve!

These stuffed peppers freeze very well. The most important thing is to make sure that there is no excess moisture in the dish. Otherwise, peppers can taste bad because of any temperature differences. As for taste, such a meal prep is no different from the peppers that have just been cooked, but it is guaranteed to delight you on a weeknight!

Choose fleshy bell peppers without damage. Wash the vegetables, core and remove the seeds. Pour pepper in hot water and leave for 5 minutes. Then transfer to cold water.

Boil rice until half cooked, it will become fully cooked later, along with the peppers. Dice an onion, grate carrots, finely chop dill and cabbage. Combine all the ingredients with ground beef, rice, add 1 egg and salt to taste.

Mix the filling thoroughly and stuff the peppers with it. Pack them in an air-tight bags and put in the freezer. Don't press them to hard so that the peppers do not deform.
