Culinary history shows us that the origins of any national cuisine often resemble the Italian one. And it’s hard to disagree. Most of Italian dishes are prepared as simply and quickly as possible. That’s why many Italian meals, like pasta and pizza are so popular all over the world. Even lasagna alone says a lot!

But today it’s all about crispy bruschettas with roasted pepper and feta cheese. They impress not only with colorful appearance, but also with incredible taste and aroma. Try serving this meal on a holiday table. Pleased guests won’t stop asking you about it.

Clean the peppers from seeds and peduncles, then cut each one in half, drizzle with olive oil and put in a baking dish with the skin up. Put the peppers in an oven preheated to 375 °F (190 °C) for 15–20 minutes, until the sides darken.

Remove the dish with peppers from the oven and cover with foil. Leave to cool completely, then remove the skin from the pepper, and cut the flesh into strips.

Cut the cucumber into thin slices, chop the parsley with a knife. Add roasted peppers, balsamic vinegar, salt, pepper and mix thoroughly.

Brush slices of bread with olive oil and bake in the oven for about 5 minutes at 350 °F (180 °C). Then rub each side of the bread with a garlic clove.

Crush up the cheese with a fork and mix with sour cream. Put the mixture on the toasts and smooth out the surface. Put the vegetable salad on top.

You can decorate the bruschettas with a small leaf of basil or the rest of the cheese. This dish without any doubt will be a great snack with any drink on a holiday table. Like many people nowadays, I love to explore new places. My favorite type is slow travelling, when you can really blend in with locals and learn about new cultures and languages. But I think there are also perfect times for enjoying freshly baked pastry, a cup of fragrant coffee, and a good movie in the comfort of your own home.
