If you like queso, you definitely must try today’s recipe! This decadent cream cheese corn casserole makes a perfect potluck dish or a side for any special occasion.

You can also easily transform the recipe into a delicious dip. Just use a blender or add more milk and cheese for the right texture.

To a saucepan add the cream cheese and butter and place over low heat. Cook for 2 minutes stirring constantly. Stir in milk, salt, and pepper. Stir in thawed corn, jalapeños, and half of the shredded cheese.

Lightly coat a baking dish with butter or cooking spray. Pour the mixture into the dish. Sprinkle the rest of the cheese on top. Bake in an oven preheated to 350 °F (180 °C) for about 20 minutes. Let cool for 10 minutes.
