Today’s recipe for butter-roasted sweet potatoes requires only three staple ingredients yet it turns out out-of-this-world yummy! After all, all the best things start with butter.

The secret to roasting sweet potatoes with irresistible caramelized edges and buttery soft middle is to cut them into thick discs and let them caramelize in butter. As a result, you’ll get the ultimate comforting side dish for any lunch, dinner, or holiday feast. This fabulous recipe won’t let you think of roasted sweet potatoes the same way ever again.



Preheat the oven to 425 °F.


Peel sweet potatoes and cut them into thick discs.


Arrange the rounds on a baking sheet. Drizzle with melted butter, season with salt, and toss to coat.


Bake for 20 minutes before flipping the rounds over, and then roast for 20 minutes more.
