Did you know that in Europe carrots are the most popular root vegetable after potatoes? Besides, the body absorbs thermally processed carrots several times better than raw ones. Additionally, carotene from carrots needs to be consumed with fat to be absorbed.

So, about our carrot patties. Wait to turn your nose up and skip to a different page in search of something more “edible.” This recipe will convince you that carrots as the main dish are not only beneficial but also delicious!

Chicken liver is a very delicate product; therefore, it will make a perfect filling for these vitamin-abundant patties. The trick with milk plays an important role: lactic acids soften the carrot pulp, and the vegetable becomes surprisingly tender with a creamy flavor. Intrigued yet? Let’s start cooking!

Steps

1
Done

Season chicken liver with salt and pepper and roll in flour. Cook for 3 minutes on both sides until half-cooked. Let cook, then cut into small cubes, sprinkle with ground caraway seeds, and mix.

2
Done

Finely grate peeled carrots and cover the mass with milk for half an hour.

3
Done

Chop onion and garlic and fry in a little sunflower oil. Strain the carrots. Mix half with the liver and add the other half to the grated carrots.

4
Done

Next, add eggs, flour, salt, and ground black pepper to the carrots; stir thoroughly.

5
Done

Make a flat cake out of the carrot mass and place the liver filling inside. Pinch together the edges, forming a patty.

6
Done

Fry patties for 5 minutes on each side, then transfer to a baking sheet and bake in the oven for 10 minutes at 360 °F until tender.

Carrot patties with chicken liver make an excellent healthy and delicious meal. Serve it with sour cream or tomato sauce, enjoy yourself, and treat your friends!

I am an English major with a love of languages and fiction, and with an incurable travel bug. In my free time, I read fantasy, drink copious amounts of coffee, and like to go see movies. Culinary art means everything to me. My main hypostasis is the taster, though. The music school has taught me to appreciate the symphony of airy meringues, to create harmonious overtures of light snacks, hard rock of meat, fish, and vegetables on the grill. Choir classes have accustomed me to hear and feel the people nearby and create perfect harmonies of sounds.
